Benedict version-Sunrise Poached Egg open face sandwich

Ingredients
1 large egg1 slice baby Swiss (or desired cheese or leave out)1 tsp Duke's Olive Oil light mayo mixed with 1TBS lemon juice1/2 cup baby spinach4 grape tomatoes (yellow and red)2 slices oven roasted turkey1 small slice hearty toast or whole wheat English muffin 1/2cider or white vinegar, 2 capfuls
Directions
bring water to slow boil, with vinegar
chop tomatoes while water is coming to a boil
place eggs in water to poach
while eggs are cooking, toast bread and microwave spinach with turkey on top, and cheese on top of that
put mayonnaise on toast
flip spinach, turkey, cheese upside down on toast with spinach up
place poached egg on top of this
top with tomatoes
cut small slice in egg so yolk drains out on toast
Mix mayo with lemon juice and dribble on top of sandwich.

Voila, serve!
