Steve's Lentil Meatballs

- 64g lentils, raw- 1/4 cup onion, diced- 1/4 cup carrot, diced- 1/4 cup mushrooms, diced- 1/2 tsp olive oil- 1/2 cup panko or bread crumbs- 1 egg- 1/2 tsp salt- 1 tsp each tomato sauce and mustard
1. Cook lentils for about 20 minutes, drain, and cool to room temperature.
2. Meanwhiles saute mushrooms, onion, and carrot in oilve oil. Remove from heat and add to lentils, cool.
3. Add panko, egg, and other ingredients. Mix well and chill.
4. Preheat oven to 400F.
5. Form into balls. Place on parchment paper-lined baking sheet. Bake/Roast for about 30 minutes or until firm and cooked.
Serving Size: makes 9 1-inch balls
