Thai-Style Mango Salad

Ingredients
Water, tap, 1.5 cup Whole Grain Quinoa 0.75 cup 3 Mango, raw Cucumber 2 small 1 large Red Bell Pepper Spinach 1 cupDressing:Lime Juice 2 TBspFish Sauce 2 TbspGarlic, 2 clove Ginger Root, 2 tsp1 small ShallotOlive Oil, 1 tbspSalt and Pepper and fresh parsley (optional)
Directions
1.In a medium soucepan, bring the water and quinoa to a boil. Reduce to a simmer, cover and cook for 13 minutes. Remove cover and cool completely.
2. Slice all the veggies thinly.
3. Place cooked quinoa in a medium bowl with mango, cucumber, red pepper, and shallot.
4. In small blender mix all dressing ingredients.
5. Mix dressing with quinoa/veggie mix and add spinach.
