1 1/2 cups Great Northern beans, rinsed and drained3/4 cup cottage cheese2 teaspoons chopped fresh rosemary1 teaspoon grated lemon zest1 tablespoon lemon juice1 garlic clove, chopped1/4 teaspoon black pepper1/3 cup finely chopped red bell pepper4 cups assorted fresh vegetables
In a food processor, the pulse the beans, cottage cheese, rosemary, lemon zest, lemon juice, garlic and black pepper for 10 to 15 times or until nearly smooth. Transfer the dip to a medium bowl. Stir in the red peppers. Serve the dip with vegetables. *Optional, also try serving with whole pita wedges. **Nutritional Information based on Daisy Brand Low Fat Cottage Cheese.
