Chocolate Mug Cake (Happy Herbivore)

4 tbsp King Arthur Unbleached All-Purpose flour2 tbsp brown sugar2 tbsp unsweetened cocoa1/2 tsp baking powder3 tbsp nondairy milk (I used unsweetened vanilla Almond Milk)1/4 c unsweetened applesaucevanilla extractdash cinnamon2-3 tbsp vegan chocolate chips
Whisk flour, sugar, baking powder, cocoa, and cinnamon together, and set aside. In a separate bowl, whisk the applesauce, nondairy milk, and a drop or two of vanilla extract. Pour wet ingredients into dry, add chocolate chips, and stir to combine.
Add 1-2 additional tbsp of applesauce if desired (but adjust nutrition accordingly) to achieve cake batter consistency. Pour batter into coffee cup and microwave for 3 minutes (at 1000 watts; adjust time for different power levels). Eat!
