Chocolate Cherry Coke Muffins

2 (12-oz) cans cola⅓ cup canola oil1 tsp vanilla1 egg, beaten3 tbsp cocoa powder⅓ cup brown sugar1 ½ cups flour1 cup spelt flour1 tbsp baking powder¼ tsp baking soda½ tsp salt⅓ cup chopped candied cherries, plus 12 whole candied cherries for topping
Place the cola in a saucepan and bring to a boil. Cook until reduced by half ( 1 1/3 cups) and let cool.
Preheat the oven to 375F and line a muffin tin with paper liners.
In a bowl, beat together the cola syrup, oil, vanilla, egg, cocoa and brown sugar.
Add the flours, baking powder, baking soda and salt, mixing until just combined.
Fold in chopped candied cherries.
Scoop into muffin tins and lightly press a whole candied cherry onto the top of each one.
Bake for 20 minutes, until tests done. Turn out immediately onto a wire rack and cool completely before glazing (if desired)
