Turkey Quinoa Muffins

Ingredients
1lb. ground turkey, white meat3/4 c. cooked quinoa1/2 c. rolled oats1 carrot, diced small1 green onion, chopped1 egg2 egg whites1 tsp. cumin1/2 tsp. salt1/4 tsp. pepper1/4 tsp. ground mustard1/4 tsp. chili powder1/4 tsp. garlic powder2 Tbsp. fresh parsley, chopped
Directions
1. Preheat oven to 375 degrees and grease a muffin pan or line with muffin cups.
2. Mix all ingredients in a large bowl together.
3. Divide evenly among muffin cups
4. Bake for 35-40 minutes until fully cooked.
5. Let cool for 5 minutes, then use a knife to loosen the edges and cool on a rack.
