Salad in a Jar, Lettuce, Vegetables, Pasta and Beans

4 wide mouth 1-quart Mason jarsvacuum sealer and wide mouth jar sealerORan alternative procedure to vacuum seal the jarsDressing: 1/4 C Water 1/4 C Red wine vinegar 2 Tbsp Sugar 1 tsp Basil, dried 1 Tbsp Lemon juice 1 Tbsp Dijon mustard 1 clove Garlic, minced1/2 tsp Black pepper Freshly groundedFor the salad: 6 oz Rotini 1 C Broccoli, sliced 8 C Romaine lettuce Washed and chop into bite size chunks1 can Kidney beans Drained and rinsed1 C Carrot Sliced1 /2 C Red onion Cut into halves and thinly sliced1/2 C Parmesan cheese grated
The lettuce has to be thoroughly dried, otherwise, it is going to wilt.
For the pasta: Cook according to package directions. Drain.
Peel off the hard layer of the broccoli stems, and slice. Steam the broccoli slices and broccoli florets to your taste.
You can steam the carrots, to your taste, or add them raw to the salad.
For the dressing, whisk all the ingredients until well blended.
To assemble the salad in a jar, from bottom to top:
Dressing - cheese - onion - beans - pasta - carrot - broccoli - lettuce
Vacuum seal the mason jar, after assembling the salad.
Serving Size: Makes 4 salads in a jar
