One large jar Roasted Red Peppers (drained)2 large tins diced tomatoesOne large head Purple Cabbage, roughly chopped2 cloves of garlic chopped6 slices of bacon, diced1/4 purple onion, choppedOne carton (1Litre) of low sodium beef broth3 Bay leaves
Puree red peppers and tomatoes in blender, set aside. Chop bacon and brown in 6qt/5.7L pot. Add diced garlic and onions and cook until bacon is crispy. Add diced cabbage and saute, coating all the cabbage in the bacon grease and onions. Add pureed peppers and tomatoes, Bay Leaves and beef broth. Bring to a boil and simmer with lid on for 1 hour. Remove Bay leaves and semi-puree with hand immersion blender, leaving some whole cabbage pieces.
