Macaroni & Cheese w/Chicken & Broccoli

Ingredients
3 tbsp butter3 tbsp flour1 cup chicken broth2 cups skim milk1 tbsp olive oil1.5 pounds boneless skinless chicken breasts or tenders1 pound pastasalt to taste2.5 cups low fat cheddar cheese
Directions
Place oil in a large skillet to cook the chicken. Cut chicken into cubes (be sure to trim any excess fat). When the oil is warm place the chicken in the skillet on a medium heat. Meanwhile, boil your water for your pasta. In a small saucepan place 3 tbsp butter (can substitute low fat butter) until melted, top w/3 tbsp flour to create a thick mixture. Cook on low heat until bubbling. Next add 2 cups of skim milk while whisking the butter/flour mixture. Add chicken broth & let the mixture thicken on a low-medium heat. Be sure to continue mixing w/the whisk so the sauce does not burn. When the mixture has thickened remove from the heat & add the cheese. Cook pasta & broccoli as per directions on the box. Mix all ingredients together for a tasty family meal. Serve w/a side tossed salad if you like.

    Not bad. A little too bland. The next time I make it I will have to find something to flavor it more. I tried garlic but that wasn't enough. - 4/26/10
