Vegetable Timbale (The Plan)

Ingredients
1 large zucchini1 red onion1/2 bunch Swiss chard (use kale if you have thyroid dysfunction)4 to 6 oz soft goat cheese, crumbled1-1/2 large carrots8 mushrooms (shiitake)2 oz Parmesan or Manchego, grated
Directions
Preheat oven to 400 degrees F. Use a mandoline or slice vegetables as thinly as you can. Create layers as for lasagna, laying vegetables and goat cheese in a 9" baking dish (does not need to be oiled): zucchini, onion, Swiss chard, goat cheese, carrots, shiitakes, etc., and top with Parmesan or Manchego. Cook for 30 minutes or until cheese on top is slightly golden. Makes 6 servings.
