High Protein Banana Muffins

3 small very ripe bananas3/4 c. oat flour3/4 c. vanilla protein powder(use soy or rice if making vegan)1/4 c. unsweetened applesauce1 tsp baking soda6 oz. plain greek style almond or coconut yogurt 2 tsp ground flax seed2 oz. unsweetened almond milk2 tsp vanill extractStevia to taste (or other natural sweetener.
Preheat oven to 375 degrees.
Add all dry ingredients to a food processor, and process in short pulses to incorporate. Add banana, yogurt, vanilla extract, almond milk, and applesauce. Process until batter is smooth.
Evenly distribute into 12 paperlined muffin cups sprayed with nonstick spray. Bake for 16-18 minutes.
