pk's confetti rice with chicken

2oz boneless skinless chicken breast cut into 1 inch chunks1/2C instant rice 1/2C water1/4C sweet red pepper1/4C yellow bell pepper1/4C chopped onion1T minced garlic1/8C chopped celery1/4C chopped fresh parsley1/2oz sundried tomatoes, julienne cut1/2C fresh mushrooms, chopped1/4C shredded carrots1t extra virgin olive oil1t butter1/2C chicken broth
Start 1/2C water in saucepan, then start chopping vegies. When water comes to a boil add rice, put lid on pan and turn off.
Heat butter and olive oil over medium high heat till butter melts then add mushrooms. After they've started turning brown and have absorbed the butter and olive oil add the rest of the ingredients and cook till chicken is done.
Makes 1 large, very filling, serving.
