Crustless egg white quiche

2.25 cups of egg whites4 cups of fresh spinach1.5 cups left over ham1 cup nonfat cottage cheese1 cup sliced mushrooms1 ounce fetaChopped chivesRed pepper to taste
In a medium or large skillet cook chives, mushrooms and ham until heated through, add spinach and leave on heat just long enough to wilt. In a mixing bowl add egg whites, cottage cheese, feta cheese, red pepper and mix well. When cooled the mixture from the skillet can be added or placed in a food processor and then added. Poor into a nonstick square baking pan that's been spritzed with nonstick cooking spray. Bake at 375 for 40-45 minutes until just set in the middle, puffed and edges are browning.
