Bean Burgers

400g each:ChickpeasRed Kidney BeansBlack BeansNavy Beans100g whole wheat bread crumbs2 onions, chopped2 tbsp molasses2 tbsp paprika3 cups chopped parsley
In a frying pan, lightly cook the onions until soft. Add the parsley and cook until wilted.
In a very large flat bottomed pot, half mash all of the beans until somewhat paste-like. Add bread crumbs, onions, parsley, molasses and paprika and mix until combined well.
Split in equal portions (usually 12 in my experience) and shape into balls. Press down on each ball with your palm to flatten into a nice burger shape.
Dust with whole wheat flour if desired.
To cook, spray each side with olive oil and cook over medium-low heat for approximately 10 minutes, or until heated through.
To freeze, place each burger on parchment paper with a layer of parchment paper in between each burger. If you do not do this the burgers will stick together and you will get bean BITS not burgers when you try and get them apart! Cook them from frozen, the same way as fresh - it just may take 2 or 3 minutes longer.
