Gracilu's Margarita Spaghetti Squash

1 Large Spaghetti Squash2 tbsp. Extra Virgin Olive Oil1 15 oz can H-E-B Mexican Style Diced Tomatoes1/4 c Fat Free Fancy Mozzarella Cheese1 tsp each salt & pepper1 Garlic clove, minced
1) Preheat oven to 400 degrees on convection setting
2) Poke holes into the spaghetti squash and place inside a damp paper towel then microwave for 7-10 minutes.
3) After microwaving, using a large knife or cleaver, slice the spaghetti squash in half lengthwise down the middle.
4) Use a spoon to remove the seeds and center strings
5) Drizzle the 2 halves with olive oil and then sprinkle with salt, pepper and garlic.
6) Place the squash, open side down on a baking sheet with 1/2 c of water in the bottom.
7) Bake for 45 minutes.
8) Remove from the oven, check to see if the squash is soft in the center and easily comes up with a fork into a spaghetti like texture. If it's too hard to remove, cook for another 10 minutes.
9) Remove from the oven, scrape and fluff the stringy squash with a fork.
10) Leave the squash in the skin.
11) Turn the oven up to broil
12) Add the tomatoes, stir and add the mozzarella cheese.
13) Place in the broiler for 3-4 minutes, until the cheese is melted and slightly browned.
14) Allow to cool for 5 minutes before serving the squash.
