Eggless Egg Salad

Ingredients
1 carton water-packed extra-firm tofu2 Tbs finely chopped celery2 Tbs finely chopped scallion2 Tbs finely chopped red bell pepper4 Tbs vegan mayonnaise2 Tbs mustard (yellow or Dijon)1/2 tsp ground cumin1/2 tsp saltFreshly ground pepper to taste
Directions
Drain and squeeze out the tofu very well. Crumble tofu into a bowl and then mix in all of the rest of the ingredients. Refrigerate for at least an hour (optional). Serve with crackers or as a sandwich filling. Yum!
