Shrimp Salad

Ingredients
3 cups Spinach12 shrimp, cooked1/2 cup asparagus, steamed2 marinated artichoke hearts, diced1 hard boiled egg, chopped2 tbsp light french dressing
Directions
- steam the shrimp until pink and the asparagus just until softened.
- Toss everything in a bowl, mix to coat in dressing and serve.

Serving Size: Makes 1 meal-sized salad
