Apple Oatmeal Cake

1 cup quick-cooking oatmeal1/3 cup butter, melted2/3 cup unsweetened applesauce1 1/3 cup boiling water3/4 cup unpacked brown sugar1/2 cup white sugar2 eggs1 1/3 cup flour1 1/2 tsp cinnamon1/2 tsp nutmeg1/2 tsp salt1 tsp baking soda2 medium Granny Smith apple, diced2 Tbs liquid honey
Boil the water and heat the butter and applesauce until the butter melts.
In a large bowl, mix together the water, butter/applesauce mixture, and the oatmeal. Let cool slightly. Mix in slightly beaten eggs.
In a medium bowl, mix together all dry ingredients. Once thoroughly mixed, add diced apples and stir to coat.
Mix the wet and dry ingredients until just blended. Pour into a 9 x 13 pan that has been sprayed lightly with cooking spray.
Drizzle the top of the cake with liquid honey. Bake at 350 for 25 - 30 minutes.
Serving Size: makes 12 squares from a 9 x 13 pan - smaller squares = lower calorie count!
