UNDEAD SUNRISE MUFFINS

Ingredients
1 navel orange (including peel) cut into eighths0.5 cup trop 50 (orange juice)1.25 cup cholesterol free egg substitute.25 cup coconut oil1.5 cup gluten free all purpose flour (I use Bob's Red Mill)1 cup splenda essentials plus fiber1 teaspoon baking powder1 teaspoon baking soda1 teaspoon salt0.75 cup 50% reduced sugar craisins
Directions
preheat oven to 350 degrees

coat muffin tin with cooking spray

cut orange into eighths

place wet ingredients in blender and blend until smooth

whisk dry ingredients together in a large bowl

make a well in dry ingredients and pour in wet mixture. stir until well mixed.

fold in cranberries.

fill 12 muffin cups almost full.

bake 20-25 minutes.

cool and enjoy.
