4 egg whites3 c powdered sugar1/2 c + 2 T dutch processed cocoa powder1 t vanilla extract1/2 t salt1/2 c dried cherries
Preheat oven to 350 degrees. Mix dry ingredients and set aside. Beat egg whites with an electric mixer until white and frothy (but not stiff peaks). Fold in vanilla, then the dry ingredients with a spatula. The batter will be very thick. Drop by tablespoonful onto parchment paper on a cookie sheet. Bake for 12-13 minutes, until tops are crackled. Take out of oven and let stand for a couple of minutes before removing, then use a spatula to remove. Cool on cooling racks.
