2 lb boneless pork loin4 med. potatoes (peeled and chopped chunky)8 carrots (peeled & chopped chunky)2 tbsp extra virgin olive oil (canola or veg fine too)Seasoning to taste or just salt & pepper is fine too.
While oven is preheating to 400, peel & chop veggies. Put then in bottom of pan, drizzle with the oil & mix together until all coated. Then spread around the outer edge of pan and place pork loin in the middle. Cover and bake 30-45 mins until meat reaches 165 degrees. Dont' overcook.
