Carrot, Quinoa and Spinach Soup

Ingredients
4 large carrots1 large onion3 cloves of garlic2 tbsp. olive oil1 tsp paprika1/2 tsp coriander1/4 tsp ground ginger8 cups chicken broth2 cups spinach1 cup quinoa10 oz can of coconut milk
Directions
Saute chopped carrots, chopped onion and minced garlic in oil until soft. Stir in spices and quinoa.
Add broth and simmer until quinoa is cooked - about 30 minutes.
Add spinach and coconut milk
Season to taste with salt and pepper.

Serving Size: 10 to 12 servings
