Spinach and Mushroom Mini Quiche

Ingredients
8 medium eggs (6 large)2 C fresh spinach1 cup sliced mushrooms1/4 gruyere cheese, shredded3 Tbl grated parmesan cheese1 tsp olive oil1 clove garlic
Directions
Saute mushrooms in hot oil for 3 min. Meanwhile, roughly chop spinach and chop garlic. Add garlic to mushrooms and saute for 2 min. Add spinach to pan, cover, and turn off heat. Beat eggs in large bowl. Add both cheeses and mix well. Mix in spinach mixture into eggs and divide evenly into 12 muffin tins (sprayed with Canola oil). Bake for 15-18 min in a 400 degree oven.
