Mardi Gras Salad

Ingredients
2 c. cabbage, red- diced1 lg onion, diced1/2 c golden raisins1 yellow bell pepper, diced1/2 bag spinach, diced1 tsp salt1 tsp pepper1 clove garlic, minced1/4 c apple cider vinegar1/4 c olive oil
Directions
Mix all chopped vegetables and raisins in a bowl. Sprinkle with salt, pepper and garlic. Add apple cider vinegar and olive oil. Toss and serve.
