Ramen Tofu Soba

Ingredients
2 packets Oriental ramen2 cups frozen stir fry veggies2 tbsp low-sodium soy sauce2 tbsp teriyaki sauce2 tbsp rice vinegar1 block extra firm tofuolive oil
Directions
Make both packets of ramen (using only one packet of sauce mix). Drain and set aside.

Fry tofu in a small drizzle of olive oil. Add noodles and veggies. Add the other sauce packet and about a third of a cup of water.

Add sauces, stir, and fry until water reduces.

Serving Size: Makes 2 super large servings
