6 Egg Whites6 Whole Eggs1 Pint 1% Cottage Cheese1 Cup Shredded Reduced Fat Swiss Cheese (I prefer Alphine Lace)Cooking Spray1 Large Scallion, chopped1 Medium Onion, chopped5-6 Green Onions, chopped2 Leeks, chopped3-4 Garlic Cloves, chopped2 Tbsp. Chives, chopped1 Tbsp. Nutmeg, groundsalt and pepper to tastePam w/Flour Baking Spray
Preheat Oven for 350°
Prep individual ramekins or a 9x9 pryex dish with Pam w/Flour Baking Spray and put aside.
Saute chopped lilies in a pan sprayed with light cooking spray until tender, about 10 minutes. Salt and pepper to taste and set aside.
Beat eggs then add cottage cheese and nutmeg. Fold in swiss cheese and sauteed lilies.
Bake 45-50 minutes, depending on oven, until golden brown.
