Chunky Tomato Soup

Ingredients
1 T Olive oil1 c. diced zucchini.5 c. diced carrot.25 c. diced onion2 c. tomato sauce (I use Hunts)1 can fire roasted tomatoes, diced1 c. tap water1 T Worcestershire sauce1 T chili powder1 T chipotle chili pepper powder (or to taste)1 c. skim milk
Directions
Saute veggies in oil until crisp tender. I ran them through a light chop in the blender, then returned them to the pot.

To the veggies, add all remaining ingredients EXCEPT milk (if you don't use milk, increase water by 1 cup).

Heat over medium heat for 20 minutes, or until soup comes to a quiet boil. Boil 1 minute, or until your veggies are the consistency you like.

Lower the heat and add 1 c. skim milk (if using). Heat until warm. Serve with your favorite sandwich. Enjoy!
