3 cups watermelon cubes1/2 cup mint leaves 12 ounces reduced-fat feta, cubedsalt and pepper12 wooden or bamboo skewers
Place one cube of watermelon on each skewer, then 2-3 mint leaves, 1 cube feta and a second watermelon cube.
Season with salt and pepper.
Refrigerate or serve immediately.
If desired, drizzle with balsamic vinegar and/or olive oil.
