Blueberry Banana Bread

Ingredients
3/4 Cup Sugar1/3 Cup butter or substitute apple butter or apple sauce 2-3 Mashed ripe bananas1/4 Cup lowfat buttermilk (3/4 tsp lemon juice+milk)1 tsp vanilla1 egg or 2 egg whites1 1/4 cup whole wheat flour (or 1/2 white 1/2 wheat)1tsp baking powder1/2 tsp baking soda1/2 tsp salt1/2 tsp cinnamon1/8 tsp cloves1/8 tsp nutmeg2/3 Cup blueberries
Directions
Preheat oven to 350

Grease and flour 8 or 9" bread pan

Combine sugar and margarine

Add bananas, buttermilk, vanilla and egg

In separate bowl combine flour, baking powder, baking soda, salt and spices

Add dry ingredients to wet

Fold in blueberries and add to bread pan

Bake at 350 degrees F. for 45-60 minutes
