Chocolate macaron cookies (French!)

3 egg whites, room temperature3 T granulated sugar2 c powdered sugar1 c almond meal or flour3 T cocoa
In a food processor, blend the cocoa, almond meal and powdered sugar. Process until almond meal is finely ground and the mixture is well blended. Sift.
Beat egg whites. When they get white and frothy, sprinkle in the granulated sugar. Continue beating until whites are glossy and hold a peak. Fold in dry ingredients 1/4 of the mixture at a time.
Place parchment paper on baking sheet. Pipe 2" circles, then bang the sheet on the counter to remove air bubbles. Let stand 30 minutes, then bake at 350 degrees for 15 min (if more than one sheet, trade after 7 min). Let cool on parchment paper, then remove and fill pairs with whatever you want :)
