Judy's Turkey spinach Tomato frittata

Ingredients
8 oz lean ground turkey - or substitute turkey sausage for this and next 6 ingredients2 tsp sage (more or less to taste)2 tsp granulated garlic (more or less to taste)1 tsp oregano (more or less to taste)1/2 tsp pepper (more or less to taste)1/2 tsp salt (more or less to taste - I skip)1/2 tsp red pepper ( (more or less to taste - I skip this)1/2 c chopped onion1/2 c chopped sweet red pepper1 tsp olive oil1 cup frozen spinach1/2 c sun dried tomatoes (not in oil)9 large eggs2 T fage yogurt (or cottage cheese - both are optional)1/2 tsp thyme (fresh or dried - not ground)12 grape tomatoes
Directions
Preheat oven to 350
Soak frozen spinach in water to thaw
Mix ground turkey and spices through red pepper to make turkey sausage - or just use purchased turkey sausage if you're not someone who has to know what you're eating.
Brown sausage, crumbling with spatula as it cooks.
Meanwhile saute onions and sweet pepper in pan with small amount of Olive oil.
Squeeze water out of thawed spinach.
Spray 9 in pie pan wih olive oil or Pam
Mix Onions & Peppers, Turkey sausage, spinach and sun dried tomatoes and pour into prepared pie plater
Whip eggs with yogurt or cottage cheese - I use Magic Bullet for this - the yogurt or cottage cheese keeps the eggs soft but this is optional if you don't have it or just want to skip this step.
Pour over other ingredients in pie plate
Sprinkle thyme over top
Cut tomatoes and place in pleasing arrangement on top of egg dish.
Bake for 30 minutes or until center is set.
