Black Bean, Sausage and Spinach Soup

Ingredients
300 grams turkey sausage (spicy Italian)1 28 oz can diced tomatoes1 1/2 cups canned or cooked black beans1 tbsp. basil6 cups chicken broth2 cups frozen or fresh spinach1/2 cup quinoa2 cups red bell pepper, chopped
Directions
Break up the sausage meat and cook in a dutch oven until no longer pink.
Add remaining ingredients except the spinach and simmer for 20 minutes.
Add spinach and reheat.
Season to taste. Garnish with parmesan cheese.

Serving Size: Makes 8 to 10 large servings
