Coconut Lime Jasmine Rice Pudding

Ingredients
1 cup dry jasmine rice2 14 oz cans light coconut milk1 cup nonfat milk1 cup granulated sugar2 Tbsp butter2 Tbsp lime zest (about 4 limes)Juice of 1 lime1/2 tsp salt (optional)
Directions
Combine rice, coconut milk, milk, sugar, and butter in sauce pot.
Bring to a boil and stir well.
Lower heat to a simmer, and simmer approximately 25 minutes.
Stir mixture while simmering every 3-4 minutes.
Rice will plump and sauce will thicken.
When mixture has come together to thick pudding. Mix in salt, lime zest, and lime juice.
Set aside and cool in refrigerator.
When cool, scoop into individual portions and garnish with more lime zest and toasted shredded or flaked coconut.

    How is this in any way, form or fashion, healthy? Refined white rice, sugar...simple carbs abound! (Evidenced by so little fiber it's as good as zero). And the portion size for the calorie cost is minimal. Aside from having some calcium, it has no redeeming qualities. Uncle Ben's strikes again! - 5/28/14

    I like to use my own rice instead and different flavors of zest such as lemon or orange. I use non-fat milk and Splenda instead of sugar. - 5/28/14

    This recipe is high in calories and contains several superfluous ingredients (butter, salt), but it's also delicious. I plan to try it using brown rice, a sugar substitute, more milk and less coconut milk. I didn't have lime rind, so I crumbled a keffir lime leaf. Mmmmm. - 4/7/20

    Lighten up people! Not everybody is at the same stage in this journey and this is a good recipe for those who like rice pudding. If you don't like the recipe, don't make it. As for me, I might even add some dried pineapple or raisins to the basic recipe. - 6/26/14
