Banana Granola Breakfast Cookies

Ingredients
½ cup refined coconut oil8 packets Truvia (or 2 tbsp Truvia Spoonable)12 packets Pure Via Turbinado and Stevia Blend¼ cup dark brown sugar1 egg½ tsp vanilla1 cup well-mashed bananas1 ½ cups whole wheat or spelt flour½ tsp baking soda½ tsp salt1 tsp cinnamon¼ tsp nutmeg1 cup granola (use your favourite, I love Love Crunch® Dark Chocolate & Red Berries from Nature’s Path)¼ cup chopped dried bananas
Directions
Preheat the oven to 375F and line 2 baking sheets with parchment.
In a bowl, beat together the coconut oil, Truvia, Pure Via and sugar until well blended.
Add egg and vanilla, beating well.
Beat in mashed bananas.
Add the flour, baking soda, salt, cinnamon and nutmeg and mix in thoroughly.
Fold in granola and dried bananas.
Scoop onto the sheets and bake 14 minutes. Cool completely on the sheets.
