Introduction

A great 30-calorie sweet treat! A great 30-calorie sweet treat!
Number of Servings: 11

Ingredients

    1/2 tsp vanilla extract
    1 T Splenda
1/4 cup plus 1 Tbsp fat-free cream cheese
    1 Tbsp unsweetened cocoa powder
    1 cup light whipped topping
    1 Tbsp mini chocolate chips

Directions

Mix the whipped topping, cream cheese, vanilla, and Splenda (using mixer, blender, or bowl and fork).

For chocolate cheesecake bites, add the cocoa powder and stir thoroughly.

To create swirl cheesecakes, add the cocoa to half the batter. Mix thoroughly, then recombine the batter, swirling the chocolate batter into plain batter.

Spoon into an ice cube tray.

Top each bite with 5-10 mini chocolate chips, one teaspoon sugar-free chocolate syrup, or sugar-free fruit preserves. (Calories not included.)

Freeze for 2 hrs. After fully freezing, they should pop right out, or you might need to run water over the bottom of the tray to help them come out.

Yummy. I've made it 3 times...the last two i just put the mixture in a glass pie plate and froze it like a cake because it was just TOO much of a pain to get the little ice cubes out. My hubby and I just split it in half and it's still only like 105 calories! (pre choc chips) - 9/28/07

Very yummy - however, I tripled the recipe and put it in muffin tins - so it makes 16 little muffin thingies that way. - 8/11/07
