LC - Carolina BBQ Meatballs

For Meat balls1 lb ground pork1 tsp splenda1 tsp paprika1/2 tsp salt1/4 tsp black pepper1/2 tsp cumin1/4 tsp celery salt1 egg1/4 c almond flour1 Tblsp waterFor Sauce:1/4 c yellow mustard2 tsp Frank's Hot sauce1 Tblsp dried onion flakes3 Tblsp splenda2 Tblsp apple cider vinegar2 Tblsp ketchup (low sugar if possible)salt and pepper to taste
Start the sauce first so the flavors have time to develop while you are making the meatballs.
Combine all ingredients for sauce in a small saucepan, stirring utnil smooth. Simmer on low heat for about 8 minutes.
For Meatballs:
Combine all meatball ingredients into a medium bowl and ix thoroughly. Form 16 meatballs. In a large,nonstick skillet, fry meatballs over medium heat until golden on all sides and cooked through. About 3-4 minutes per side. Toss the meatballs gently in the sauce, then spread on a parchment lined baking sheet and broil (CAREFULLY!!) FOR 2-3 minutes
