Corned beef brisket with spice packet (about 2.5 lbs)5 Medium potatoes, quartered1 lb Baby Carrots1 Medium Onion cut into wedges (use toothpicks to hold together)3 Cloves garlic, minced1 Medium head cabbage cut into wedges12 oz Beer2 Bay Leaves2 tbsp Apple cider vinegar3 cups Water
Place the onion, potatoes, and carrots in a 5 qt slow cooker.
Combine water, beer, garlic, bay leaves, vinegar and spice packet. Pour over the vegetables.
Place the brisket and cabbage on top.
Cover and cook on low for 8 hours. Remove bay leaves.
