For Salad:1 cup quinoa, rinsed, cooked and cooled1 cup strawberries, quartered1 avocado, diced1/2 cup jicama, peeled & diced1/2 cup red bell pepper, diced2 scallions, thinly sliced2 TBLS fresh mint, chopped finelyFor Citrus Dressing:1/4 cup olive oil3 TBLS lime juicejuice of 1 orange2 TSP dijion mustarddash-sea salt2 TSP agave nectar2 TBLS rice vinegarCombine in bowl and toss together. Drizzle dressing over top and stir to combine.
