Poor Man's Cioppino

Ingredients
1 4oz pollock fillet, cubedRotel diced tomatoes with green chiles undrained, 1/2 can (5 ozs)2 cloves garlic, crushed1/2 tsp Parsley (dried or fresh)1/2 tspBasil (dried or fresh)1/2 tsp Thyme (dried or fresh)1/2 tsp Oregano (dried or fresh)1/2 c white wine (optional)1/2 cup chicken broth (optional)
Directions
Combine all ingredients except pollock in saucepan and heat and stir 5 mins.
Add diced pollock and cook for further 10 mins reducing liquid.
Makes slightly more than 1 cup serving.

Substitute herbs with any dried herb mix.
