Cornmeal crusted Tilapia

Ingredients
2 4 oz fillets1/2 tsp kosher salt1/4 tsp freshly ground black pepper1 large egg,. lightly beaten1/4 cup yellow cornmeal1 Tbsp all purpose flour1 tsp evoo1 tsp canola oil
Directions
Pat fish dry. Sprinkle with salt and pepper. Lightly beat egg and place in a shallow dish. Combine cornmeal and flour in another shallow dish. Dip each fillet in egg and dredge in cornmeal mixture, shaking off the excess. Heat a large nonstick skillet over medium heat. Add oils to pan; swirl to coat. Add fillets to pan and cook 3 minutes on each side or until fish flakes easily when tested with a fork.
