Cauliflower "Couscous" Salad

1 Cauliflower head2 Roasted Garlic cloves - in olive oil - finely chopped1 Onion - chopped1 Bell Pepper - chopped3 Celery Stalks - diced2 tbsp Cider Vinegar
1. Break up the florets into somewhat evenly sized pieces. Place florets in bowl of food processor in batches. Process until evenly chopped but not completely pulverized.
2. Heat the roasted garlic with the herb flavored olive oil in a non-stick pan over medium high heat and add cauliflower "couscous".
3. Add the remaining ingredients and toss. Remove from heat. Season with salt, pepper and another complimentary spice / herbs to your taste.
4. if serve as a cold salad. Chill and add Cider vinegar.
