Michele's Honey Tapioca

Ingredients
Separate egg yolk from whites.Soak tapioca in 3/4 cup water for 30 minutes. Do not drain. Add milk, salt, 1/4 cup honey and slightly beaten egg yolk. Stir over medium heat until mixture comes to a boil. Simmer uncovered 10-15 minutes, stir often.Beat egg whites until peaks form, mix in 1/4 cup honey and re-peak.Fold about 3/4 cup of tapioca mixture into egg whites then refold all together in saucepan. Stir over low head approximately 3 minutes.Cool 15 minutes, add vanilla. Sprinkle with nutmeg.
