Ingredients
1 can black beans, drained and rinsed1 can red beans, drained and rinsed1 can corn, drained and rinsed3 cups of cooked brown rice4 green onions chopped1/2 large red bell pepper chopped1/4 cup fresh cilantroDressing1/2 cup olive oil1/4 cup cider vinegar1 tbsp splenda1 garlic clove, minced1 tsp salt1 tsp ground cumin1 tsp coriander(optional)1 tsp chili powder1/2 tsp black pepper
Directions
add all ingredients to cook rice, make dressing mix and pour over rice mixture, mix and serve.
