Curried Lamb & Broccoli

Ingredients
1# Ground lamb 1 medium yellow onion, chopped3 cloves garlic, peeled and minced1 sweet medium sweet potato, peeled and cubed2 cups chopped broccoli1 cup black beans, drained1 can lite coconut milk2 Tablespoons Red Curry Paste, or to taste1/2 cup water
Directions
Brown lamb in large skillet, drain and set aside. Brown onion and garlic in a small amount of the coconut milk in the same skillet, about 5 minutes. Add cooked lamb, sweet potato, broccoli and black beans, simmer for 20 minutes, adding water as needed to keep moist. Combine remaining coconut milk and curry paste, add to meat mixture and heat until just starting to simmer.
