250g marscapone cheese1/2c mozzerella cheese1 cup frozen spinach, thawed and drained1 cup mushrooms, chopped (could add broccoli too).5 eggs, beatensalt and pepper to taste
mix cheeses and spinach, divide them into the bottom of 12 muffin cups. Add mushrooms and eggs. Bake at 350F, 180c for half an hour. Voila.
