Bonnie's Chicken with Rice, Spinach and Roasted Red Peppers

Ingredients
2 Tbsp Roasted Red Pepper and Parmesan Salad Dressing1 clove minced garlicdash of cayene pepper8 oz boneless, skinless chicken breast cut into strips3 Tbsp Lite Cream cheese8 oz roasted red peppers thinly sliced.1 cup cooked frozen chopped spinach1 1/2 cup cooked brown rice.2 Tbsp grated Parmesan cheese.salt and pepper to taste
Directions
1.Heat Salad Dressing in a deep skillet on med heat. Add garlic and cayene and cook 1 min until fragrant.
2.Add chicken and cook 5 min or until no longer pink.
3. Add cream cheese and stir until melted.
4. Add peppers, cooked spinach and rice, gently stir and cook until heated through.
5. Sprinkle with Parmesan and serve.

Serving Size: makes 2- 2 cup servings.
