Confetti Turkey Loaf

2 tsp. extra virgin olive oil 1 medium onion - diced .5 c. frozen mixed bell peppers (red, green, yellow) 1 c. cooked brown rice .5 c. heavy cream 1.5 lb. ground turkey 2 organic eggs 1 medium carrot .5 tsp. salt .25 tsp. pepper 1 Tbsp. fennel seed or dill weed (optional)
Preheat oven to 350°.
Coat a loaf pan with olive oil.
Heat olive' oil and saute onion and peppers until soft.
Transfer to a large bowl and let cool slightly (5 minutes).
Combine and soak for 5 minutes.
Add to sauteed vegetables along with the rice and cream.
Mix all ingredients together with hands until well blended.
Shape the meat into the loaf pan and bake at 350° for 1 hour.
