1 Tbsp light Olive Oil1 lbs Boneless Chicken Breasts - pounded thin1 Tbsp Garlic Powder1 cup Part Skim Ricotta Cheese1 - 1/2 tsp Oregano1 tsp Salt1/2 tsp Black Pepper1 Cup Diced tomatoes with Basil, Oregano & Garlic (drained)4 ounces (4 slices) provolone
Spinkle each chicken breast with garlic powder. Brown chicken breast in olive oil. Move browned chicken to a baking dish. cool slightly. Meanwhile mix the ricotta, salt, pepper and oregano. take 1/4 cup ricotta mixture and place on each chicken breast. Top each breast with 1/4 cup diced tomatoes. Place provolone on top of chicken, ricotta and tomatoes.
Bake in a preheated 350 oven for 25 - 30 minutes.
