Green Curry Tofu

Ingredients
15 oz tofu1/2 a large eggplant, about 12 oz7 oz green beans, steamed1/2 a jar of Trader Joe's Green Curry Simmer Sauce (3 servings)
Directions
Slice the tofu into pieces width-wise, about 1/2 thick. Heat a non-stick pan and saute tofu with your preferred oil spray until golden brown on one side. Flip and repeat so both sides are golden brown. Split the tofu into two serving bowls and set aside.

In the same pan, grill the eggplant until it is tender and soft, about 10 min, stirring to keep it from burning.

In another pan or in the microwave, steam the green beans until they are bright green but not limp. Plunge them in cold water to stop them from cooking further, then drain.

When the eggplant almost done, toss the green beans and bamboo shoots into the pan with it, and stir fry for a minute or two. Remove all the vegetables to a large bowl and pour the curry sauce over them, stirring to combine.

Divide the veggie mixture evenly into two portions and pour over the tofu. Serve immediately.
